Almond Joy Inspired Oatmeal

quaker oatsEveryone’s got their favorite Halloween candy, right? Mine happens to be Almond Joy.  Chocolate, coconut, almonds… hmmm, my favorite combo. I think I have a love affair with coconut. I eat it , drink it, whip it, and put it on my body and hair. So it’s no surprise that Almond Joy is my favorite candy. In fact, my love for Almond Joys knows no bounds.

Right before we head out for trick-or-treating, I “remind” my son to save mom a few  pieces of Almond Joy.  It didn’t go well last Halloween. My son only scored ONE miniature Almond Joy. One tiny piece. It was pretty disappointing considering he had about 2,000 lollipops in his giant pillow case, which I ended up carrying.

Halloween was a long time ago. In the meantime, I’ve created my own Almond Joy heaven in the form of oatmeal. This bowl of goodness is perfect for breakfast, lunch or snack. It’s even great for satisfying my sweet tooth cravings. I admit, sometimes, I even eat it for dinner.

I don’t know about you, but I love oatmeal. It’s always on my grocery shopping list and I eat it almost every day. Speaking of oats, Quaker® Oats is having a Bring Your Best Bowl contest where you can create your “best bowl” using Quaker® Oats and 2-5 other ingredients.

So, get on your thinking caps and start creating! quaker oatsWhat I love about oatmeal is (besides the fiber) its versatility. You can add something new every day. Oatmeal is not boring! It’s easy to make, inexpensive, and keeps you full for hours.

For my toppings I chose ingredients inspired by Almond Joy. Honestly,  I’m obsessed with this oatmeal now!quaker oatsIn addition to Quaker® Oats, Kroger had all the necessary ingredients to make my “best bowl.” Quaker oatsI don’t know about your Kroger but mine almost always has yummy samples. The other day, this super sweet lady was serving free coffee with biscotti. Yum! Several  shoppers ended up talking to each other while sampling the products. This actually made shopping fun.  Why don’t all stores do that?

 

                                          Almond Joy Inspired Oatmeal

Ingredients:

1/2 cup  Quaker® Oats old fashioned

1 cup coconut milk or almond milk

3 tsp brown sugar or agave sweetener

1/2 tsp cocoa powder

2 tsp shredded coconut

1 tsp slivered almonds

Directions for the stove top:

1. Bring coconut milk to boil.

2. Add oats and cook on medium heat for about 5 minutes.

3. Pour oatmeal in a bowl and add sugar, cocoa powder and 1 tsp of shredded coconut.

4. Toast the remaining shredded coconut and almonds until golden brown. (I do this in a small pan). Sprinkle over oatmeal.
